Preheat the oven to 200°C. Line a baking tray with baking paper and lightly grease with a little olive oil.
Chicken Meatballs with Creamy Orzo
These golden baked Chicken Meatballs with Creamy Orzo are folded through a silky, citrusy sauce with wilted greens and a gentle kick of chilli. Brancourts Classic Cottage Cheese melts through the orzo, creating a velvety finish and acting as a great alternative to heavy cream–bringing richness with less fat while adding a boost of protein and calcium. Method
In a large bowl, combine the chicken mince, breadcrumbs, egg, garlic, half of the grated parmesan, milk, rosemary, salt and black pepper. Mix gently until just combined.
Roll the mixture into evenly sized meatballs (about 14) and place them on the prepared tray.
Drizzle with olive oil and bake for 18–20 minutes, or until cooked through and lightly golden.
While the meatballs are cooking, melt the butter in a large pan over medium heat. Add the orzo and toast for 1–2 minutes, stirring frequently.
Pour in the chicken bone broth and bring to a simmer. Cook, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed, about 10 minutes.
Stir in the lemon juice, chilli flakes, spinach, cottage cheese and remaining parmesan. Cook for a few minutes until the spinach has wilted and the sauce becomes creamy.
Transfer the cooked meatballs into the pan and gently toss to coat them in the creamy orzo. Let everything simmer together for another 1–2 minutes, or to get that crispy golden meatball, you can finish it off under the grill for 2–3 minutes.
Serve warm, with extra parmesan and chilli flakes if you like.
