Method

1.

Preheat your oven to 180°C.

Slice the croissants into thirds and arrange them evenly in a baking dish.

In a high-speed blender, add the eggs, Brancourts Classic Cottage Cheese, heavy cream, caster sugar, vanilla bean extract and cinnamon. Blend until smooth.

4.

Pour the custard mixture over the croissants, pressing them gently so they absorb the custard. Scatter the mulberries and blueberries evenly on top.

5.

Bake for 25–30 minutes, or until the custard is set and the top is golden and slightly puffed. If the croissant begins to burn on top, cover the baking dish with aluminium foil and continue to bake.

6.

Remove from the oven and allow to cool slightly before serving. Dust with extra cinnamon or a light drizzle of cream if desired.
