Method

1.

Preheat the oven to 180°C. Grease or line a standard loaf tin with baking paper.

Add the Brancourts Lactose Free Cottage Cheese, eggs, raw honey, and lemon zest to a large bowl. Whisk until smooth and well combined.

In a separate bowl, whisk together the plain flour, baking powder, and sea salt.

Pour the wet mixture into the dry ingredients and gently stir with a spatula until just combined into a thick batter. Fold through the frozen blueberries, being careful not to overmix.

Transfer the batter into the prepared loaf tin, smoothing the top. Bake for 30–40 minutes, or until golden and a skewer inserted into the centre comes out clean.

Allow to cool in the tin for 10 minutes before transferring to a wire rack. Slice and enjoy warm or toasted.
