Garlic & Herb Cottage Cheese Bread
This Garlic & Herb Cottage Cheese Bread is a simple, high protein bake that's perfect for sharing with family and friends. Made with just a handful of everyday ingredients, it's an easy recipe that delivers all the comfort of freshly baked bread while providing a nutritious boost from protein rich cottage cheese and eggs.



Method
Add the cottage cheese to a blender or food processor and blend until smooth. This helps create a lighter, more even texture in the finished loaf.
In a large mixing bowl, whisk together the blended cottage cheese, 2 eggs and olive oil until well combined.
Add the plain flour, baking powder, salt and garlic powder and gently stir until just combined. Fold through the garlic cloves shredded mozzarella or parmesan, if using.
Transfer the batter to the prepared loaf tin and smooth the surface with the back of a spoon. Top with dried herbs.
Bake for 40–45 minutes, or until the loaf is golden brown and a skewer inserted into the centre comes out clean.
Allow the bread to cool in the tin for 10 minutes before transferring to a wire rack. Slice and serve warm.
