Chicken Marinade: In a large bowl, combine cottage cheese, olive oil, garlic, shallot, paprika, chilli and salt & pepper.
Chicken Tzatziki Bowl
This Chicken Tzatziki Bowl features Brancourts Classic Cottage Cheese for a creamy, protein-rich take on traditional tzatziki. Served with fresh vegetables and wholesome grains, it’s an easy way to boost your veggie intake while enjoying a balanced, satisfying lunch that’s perfect to have on rotation.



Method
Add chicken thighs and set aside to marinate for 15 minutes in the refrigerator.
While this marinates, bring a saucepan of water to a boil over medium/high heat. Once water is bubbling add brown rice and cook according to packet instructions.
Strain water and set aside until you’re ready to build your salad.
Heat a large frying pan over medium-high heat and add a light drizzle of olive oil.
Remove chicken from the marinade and pan fry for 4–5 minutes per side. Turn occasionally, until golden, lightly charred and cooked through. Set aside.
Tzatziki sauce: Using a paper towel, carefully pat dry the grated cucumber removing any excess moisture. Add all remaining tzatziki ingredients and combine well. Set aside.
Salad: In a small bowl, add diced avocado, dill, lemon juice, salt & pepper. Gently stir to combine.
In two serving bowls, begin to build your salad starting with a bed of fresh lettuce. Layer with brown rice, avocado mixture, charred chicken, cherry tomatoes, cucumber and pickled red onion.
Drizzle your desired amount of tzatziki sauce. Garnish with fresh mint and dill and enjoy!

1 tablespoon dill, finely chopped
1 tablespoon mint, finely chopped
Sea salt & pepper, to taste
Salad:
1 cos lettuce, chopped
½ cup brown rice
½ avocado, diced
6 cherry tomatoes, quartered
½ cucumber, quartered
⅓ cup pickled onion
Fresh mint, to garnish
Fresh dill, to garnish
