This Christmas Flatbread makes a festive, crowd friendly starter or appetiser. Method

1.

Preheat your oven to 200°C and line a baking tray with baking paper.

In a bowl, whisk together the Brancourts Classic Cottage Cheese, eggs and plain flour until smooth. Spread the mixture evenly onto the prepared baking tray to form a rectangular or round flatbread. Bake the flatbread for 20–25 minutes, or until it is set and lightly golden.

While the base is baking, heat olive oil in a pan over medium heat. Add the sliced onion, balsamic vinegar, honey and sea salt. Cook, stirring occasionally, for 8–10 minutes until caramelised and soft.

Remove the partially baked flatbread from the oven. Top with the caramelised onions, shredded prosciutto, pecans, cranberries, dollops of goat’s cheese and pistachios.

Return the topped flatbread to the oven and bake for a further 10–12 minutes, until the toppings are heated through and lightly golden.

6.

Drizzle with balsamic glaze and garnish with fresh rocket. Serve warm as a festive starter or shared appetiser.

2 eggs

½  cup plain flour

1 large brown onion, sliced

1 tablespoon extra virgin olive oil

1 tablespoon balsamic vinegar

2 teaspoons raw honey

½ teaspoon sea salt

50g prosciutto, shredded

½ cup pecans, roughly chopped

½ cup cranberries

40g goats cheese

¼ cup pistachios, finely chopped

1 teaspoon balsamic glaze

Fresh rocket, to garnish
