Preheat the oven to 160°C fan-forced. Line a baking tray with baking paper. In a large mixing bowl combine 1 1/4 cup cottage cheese, plain flour, baking powder and sea salt. Fold until a crumbly dough starts to form.
Cottage Cheese & Salmon Bagels
These Cottage Cheese Bagels are made with Brancourts 97% Fat Free Cottage Cheese, giving them a soft, fluffy texture while packing in plenty of protein. Method
Lightly flour your hands and work surface, then turn out the dough. Gently fold and knead a few times until smooth, being careful not to overwork it. Divide into 4 equal pieces, roll each into a ball, then poke a hole in the centre (about the size of a 50c coin) and gently stretch into a bagel shape.
Place the bagels on the prepared tray. In a small bowl, whisk the egg, then brush over the tops of each bagel. Sprinkle with poppy seeds and sesame seeds.
Bake for 25–30 minutes, or until the bagels are golden and cooked through.
Once bagels have cooled slightly, slice in half and spread over the remaining 3/4 cup cottage cheese, layer with smoked salmon, cucumber, minced capers and fresh dill. Serve with lemon wedges on the side.
