Brew coffee and pour it into a shallow bowl. Place the bowl in the fridge to chill while you get started on the tiramisu.
Cottage Cheese Tiramisu
Indulge in our smooth and velvety Brancourts Cottage Cheese Tiramisu, a lighter take on the classic Italian dessert. This version swaps out the traditional mascarpone with creamy, protein-packed cottage cheese. This lower-fat tiramisu provides you with 10g of protein with each serving! This dessert is perfect for satisfying your sweet tooth without the sugar overload.

Method
Place cottage cheese, plant milk, maple syrup and vanilla bean extract in a high-speed blender. Blend until smooth and creamy and set aside to thicken.
Using a baking dish or loaf pan, prep the ladyfingers by first measuring each biscuit to the dish. If necessary, cut 1cm from each end of the biscuit so each ladyfinger fits perfectly to the shape.
Remove espresso from the fridge and dip each ladyfinger in the cold coffee–make sure to coat both sides. Using a fork, carefully transfer each ladyfinger to the dish. I did 3 rows of 6 ladyfingers, so 18 ladyfingers for the first layer.
Pour half of the cottage cheese mixture over the first layer and spread evenly using a spoon. Begin the process one more time, layering with another 18 ladyfingers and the remaining cottage cheese mixture.
Cover with foil and store in the fridge to set for at least 4 hours, or overnight. Just before serving, sift cacao powder over the tiramisu. Cut into 6 slices and serve cold.
