Gnocchi Sorrentina

This simple and easy-to-make Gnocchi Sorrentina will be your new favourite winter comfort meal. We’ve opted for cottage cheese instead of mozzarella in this recipe for a higher protein and lower fat alternative. This is an ideal meal for any night of the week that the whole family can enjoy. Relish this comforting classic more healthily and lightly, and all in just 20 minutes

Method

1.

Heat olive oil in a large skillet over medium heat. Once hot, add in the garlic and stir for a couple of minutes. Add in the tomato purée, cherry tomatoes, sea salt and pepper. Stir well and bring to a boil.

While this is heating, bring a large saucepan of water and sea salt to a boil. Once the water is bubbling, add in the gnocchi. Wait until they rise to the surface, scoop them out and place them in the tomato sauce mixture.

Stir the gnocchi into the sauce and add chopped basil leaves. Stir again until all ingredients are well combined. Place the whole skillet in the oven to broil at high heat for 7–8 minutes.

Remove the skillet from the oven and make five small wells using a spoon. Add a tablespoon of cottage cheese to each well. Broil again for a final 2–3 minutes.

Remove from the oven and grate fresh parmesan over the top. Garnish with fresh basil and parsley. Divide into four serving bowls and serve immediately!

2 tablespoons extra virgin olive oil

4 garlic cloves, minced

2 cans 410g tomato purée

12 cherry tomatoes, halved

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1kg gnocchi

1/4 cup fresh basil leaves, finely chopped

5 tablespoons Brancourts Classic Cottage Cheese

3 tablespoons grated parmesan

Fresh basil, to garnish

Fresh parsley, to garnish
