Cottage Cheese & Herb Flatbread

Golden, herby and crispy, these flatbreads are made with Brancourts 97% Fat Free Cottage Cheese for a lighter, protein-rich dough. Method

1.

In a large bowl, combine the self-raising flour and cottage cheese. Mix with a spoon until a rough dough forms, then transfer to a lightly floured surface. Knead gently for 1–2 minutes until smooth and elastic. If the dough feels sticky, sprinkle in a little extra flour.
Set aside to rest while you prepare the filling.

In a separate bowl, add the feta, mozzarella, parsley, mint, chives, dill, oregano and chilli flakes. Use a fork or your hands to mix thoroughly, crumbling the feta into small pieces and evenly combining the herbs.

Divide the dough into 6 equal pieces and roll each into a ball. On a floured surface, flatten each ball into a disk about ¼ inch thick. Place 2–3 tablespoons of filling in the centre of a disk, gather the edges of the dough around the filling and pinch to seal. Gently flatten again to form a stuffed flatbread. Repeat with the remaining dough and filling.

Heat a frying pan with a drizzle of olive oil over medium heat. Cook each flatbread for 3–4 minutes per side, until golden brown and crisp.

In a small bowl, whisk together the parsley, mint, olive oil, and chilli flakes. Drizzle the herb dressing over the warm flatbreads and enjoy straight away.

100g feta block

 ½ cup shredded mozzarella

¼  cup flat parsley, finely chopped

¼ cup mint leaves, finely chopped

1 tablespoon chives, finely chopped

1 tablespoon dill, finely chopped

1 teaspoon dried oregano

1 teaspoon chilli flakes

Herb Dressing

1 tablespoon flat parsley, finely chopped

1 tablespoon mint leaves, finely chopped

2 tablespoons extra virgin olive oil

 ½ teaspoon chilli flakes
