Method

1.

Preheat your oven to 200°C (fan-forced). Dice sweet potatoes into bite-sized cubes and toss with olive oil, smoked paprika and Cajun powder. Spread on a baking tray and roast for 25–30 minutes, or until golden and tender, turning halfway through.

Heat a large pan over medium-high heat. Add the beef mince and cook for 5–7 minutes, breaking it up with a spatula, until browned. Add chipotle powder, tomato paste, salt and pepper. Cook for a further 5 minutes, stirring occasionally, until rich and saucy. Set aside.

In a small saucepan, gently warm the honey over low heat (don’t let it boil). Stir in chilli powder and apple cider vinegar. Remove from heat and let it sit to infuse while you assemble the bowls.
Divide the roasted sweet potato and spiced beef mince between four bowls. Add a generous scoop of Brancourts Cottage Cheese, avocado cubes and a handful of chopped greens to each bowl. Top with sliced jalapeño and a wedge of lime. Drizzle each bowl with hot honey just before serving.
