Creamy Lemon & Chicken Risoni

Method

1.

Heat olive oil in a medium sized skillet over medium/high heat. In a bowl, add Dijon mustard, 1 garlic clove, ½ shallot, rosemary and paprika. Mix until well combined. Pour over chicken in a shallow bowl, coating each side.

Add chicken to the heated skillet. Sear both sides until golden and almost cooked through, 3-4 minutes each side. During the final 2 minutes of cooking, add ghee and lemon slices. Fry until ghee is completely melted and lemon is slightly browned. Remove everything from the skillet and set aside.

Add risoni, ½ shallot and 1 garlic clove. Cook until the risen is toasted, about 2 minutes. Add broth, kale and 1 tablespoon lemon juice. Bring to a boil over high heat.

Add the chicken back into the skillet, along with the lemon slices and any juices leftover. Cook uncovered for 15-20 minutes or until the liquid has evaporated and the chicken is fully cooked through.

Meanwhile, make the creamy sauce by adding all ingredients into a small bowl. Combine well until smooth. Serve the lemon chicken immediately topped with creamy sauce. Garnish with fresh dill and season with sea salt and pepper.
