Raspberry & Lemon Cheesecake Overnight Oats

This creamy protein packed Raspberry & Lemon Cheesecake Overnight Oats is the ultimate summer breakfast. Method

In a large bowl add oats, chia seeds, protein powder, lemon juice and zest, maple syrup, raspberries and coconut milk. Stir and refrigerate for 1 hour minimum to set.

In a separate bowl add cottage cheese and vanilla bean extract. Using an electric blender or whisk, blend until smooth to remove any lumps.

Remove oats from the refrigerator and pour over the cottage cheese mixture. Using the back of a spoon, smooth the mixture to evenly distribute the cottage cheese. Place back in the refrigerator to set overnight.

4.

Before serving, top with coconut flakes, crumbled vanilla wafer and a lemon wedge.

2 tablespoons vanilla protein powder

1/2 lemon, juice and zest

1 tablespoon maple syrup

1/2 cup raspberries, fresh or defrosted

1/2 cup coconut milk

1/2 cup Brancourts Lactose Free Cottage Cheese

1 teaspoon vanilla bean extract

1 tablespoons coconut flakes

1 vanilla wafer, crumbled
