Roasted Cauliflower Salad with Creamy Hummus

This warm roasted cauliflower salad is the perfect comforting winter meal—nourishing, hearty and full of flavour. Method

1.

Preheat the oven to 200°C. Cut the cauliflower into small florets and place on a lined baking tray. Drizzle with olive oil, sprinkle with dukkaht, and season with sea salt. Toss to coat evenly.

Roast for 25–30 minutes or until golden and tender, turning halfway through for even cooking.

In a small bowl, toss the chickpeas with cumin and the remaining teaspoon of sea salt. Spread them on a separate baking tray and roast in the oven for the last 10–15 minutes of the cauliflower cooking time, or until golden and slightly crisp.

While the vegetables are roasting, combine all hummus ingredients in a high-speed blender or food processor. Blend until smooth and creamy, adding a splash of water if needed to reach your desired consistency. Set aside.

In a large bowl, combine the chopped parsley, cucumber, tomato and red onion. Add the roasted cauliflower and chickpeas and toss gently to combine.

Spread a generous layer of the creamy hummus onto the base of each serving plate or bowl. Top with the cauliflower salad and finish with a sprinkle of pomegranate seeds.

½ red onion, finely chopped
