Smoked Salmon Frittata
Our vegetable protein-packed frittata is as delicious as it is easy to make! Each serve of this simple one-pan breakfast recipe is loaded with protein from eggs, salmon and Brancourts Classic Cottage Cheese. It’s perfect for anyone looking to add more greens to their morning or for those who prefer to meal-prep breakfast for the week ahead.
Method
Drizzle olive oil in a large skillet over medium/high heat. Cook the leeks, spring onions and garlic for 5 minutes, stirring regularly. Add in dill, parsley and spinach and cook for a further 5 minutes, until soft and slightly wilted. Transfer greens to a bowl and set aside
In a separate bowl, whisk the eggs and cottage cheese, leaving a small portion of cottage cheese aside for later. Season with salt and pepper.
Clean the skillet with a paper towel and coat the pan evenly with olive oil. Scatter half of the greens mixture on the pan, then add a few strips of smoked salmon. Pour over half of the egg mixture, until all ingredients are covered.
Start cooking the frittata over low heat. Layer the remaining greens and salmon strips on the top. Pour in the remaining egg mixture and cook for about 10 minutes, until the frittata is almost set.
Transfer the skillet to the grill and cook for a further 10–15 minutes or until the frittata is set and golden brown. Spoon the remaining cottage cheese on top and garnish with leftover fresh dill, parsley or coriander. Serve and enjoy!

1/3 cup fresh dill, finely chopped
1/4 cup fresh parsley, finely chopped
1 cup baby spinach
6 eggs
250g Brancourts Classic Cottage Cheese
100g smoked salmon
Sea salt and black pepper, to taste
