Peel the first 5–6 layers of one Lebanese cucumber lengthways. Repeat the process on the opposite side so you have at least 10 seedless strips of cucumber. Place each strip on a paper towel and pat both sides dry. Set aside to dry out any excess moisture.
Smoked Salmon Tzatziki Bruschetta
Our smoked salmon bruschetta with our Lactose Free Cottage Cheese tzatziki sauce is a delicious choice! This quick, high-protein breakfast - or appetiser that’s perfect for entertaining - is also ideal for anyone who is lactose intolerant or just seeking a light, tasty option to start a busy day.
Method
Grate the other cucumber (with skin on) and add to a large bowl with cottage cheese, mint, dill, olive oil, lemon juice, minced garlic, salt and pepper. Mix until all ingredients are well combined. Set aside in the fridge to cool.
Slice up your baguette into 10–12 pieces. Toast or grill each slice until crispy and warm.
Spoon roughly 1 tablespoon of tzatziki sauce onto each baguette slice. Top with smoked salmon, sliced cucumber and pickled onion. Garnish with chives and any extra fresh dill or mint. Enjoy immediately!
