Well, you’re about to find out. This article details a simple but tasty recipe with chicken and cottage cheese. Here’s how to make it:

Gather the Ingredients

For this recipe, you’ll need:

  • 1 pound of skinless, boneless chicken breast
  • ¼ cup of your preferred type of Brancourts Cottage Cheese 
  • 1 teaspoon extra virgin olive oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 tablespoon fresh parsley
  • ¼ cup wholewheat breadcrumbs
  • ¼ cup cheddar cheese

Instructions

  1. Preheat the oven
    Setting it to 190°C (170°C with fan). 
  2. Dry off the chicken breasts and place them on a baking dish
    Sprinkle the olive oil and seasonings over them, including the garlic, salt, and pepper.
  3. Spread the Brancourts Cottage Cheese and cheddar
    Spread your preferred Brancourts Cottage Cheese and grated cheddar cheese on top of the chicken breasts.
  4. Add the breadcrumbs
    Sprinkle the breadcrumbs over the top to create an outer barrier that gives you a crunchy-gooey sensation once cooked.
  5. Bake for 25 minutes
    Place in the oven and leave the chicken until cooked. Cooking should take around 25 minutes, but always check the core of the chicken with a meat thermometer before eating. The safe internal temperature for chicken is 74°C.
  6. Garnish with parsley
    Finally, top the chicken with fresh parsley once it finishes cooking.

How To Make This Recipe Even Better

As far as chicken with cottage cheese recipes go, this one is pretty special. But that doesn’t mean you can’t make it even better. 

One alternative is chicken stuffed with cottage cheese for a Kiev-like experience. You have the breadcrumbs and spices on the outside and the soft, gooey, salty centre. 

You can also vary this recipe by playing around with the herbs. Adding rosemary, thyme, marjoram, and oregano to the mix can make it taste even more spectacular. 

Switching the cuisine around is also possible. For example, in Thai cuisine, you could add some ginger and lemongrass to your spice mix. You could also give it a more Italian feel with capers, olives, and sundried tomatoes. 

Finally, if you love spicy food, just add half a teaspoon of cayenne pepper along with the other spices. That’ll give it a kick! Alternatively, you could grind some fresh chili and add it to the cheese topping along with the bread crumbs. 

What to eat with Baked Chicken Breast with Cottage Cheese

This dish has a lot of protein, so you’ll want to include some starchy sides. Fluffy pilau rice will go perfectly, or mashed potatoes for a more traditional dish. You could also add a green salad and some roasted cauliflower to the side if you want to stay low-carb.
