Method

1.

In a high-speed blender, add cottage cheese, parmesan cheese, butter, garlic, salt and pepper and process until smooth and creamy. Set aside.

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package directions. Drain the pasta, reserving 1/2 cup of the pasta water.

3.

Return the pasta to the pot. Add alfredo sauce and pasta water. Cook over low heat, stirring constantly until the sauce is warmed and most of the liquid has been absorbed, about 3 minutes.

4.

Remove from heat and garnish with parsley and extra grated parmesan cheese before serving.
