Method

1.

In a high-speed blender, blitz the cottage cheese until smooth and creamy.

In a bowl, combine the whipped cottage cheese and peanut butter, mixing until smooth and well combined.

Spoon the mixture into 8 small egg shaped molds (or shape by hand onto a lined tray) and place in the freezer for 1–2 hours, or until firm.

4.

In a heatproof bowl, melt the dark chocolate chips and coconut oil together until smooth and glossy, stirring until fully combined.

5.

Remove the frozen eggs and dip each one into the melted chocolate, coating evenly. Place back onto a lined tray and sprinkle with flaky sea salt while the chocolate is still wet.

6.

Return to the fridge or freezer for a few minutes to set before serving.
