Cottage Cheese Cinnamon Scroll

These Cottage Cheese Cinnamon Scrolls are made with Brancourts Classic Cottage Cheese, which adds extra protein while keeping the dough soft, fluffy and rich. Blending the cottage cheese into the dough creates a beautifully tender texture that works perfectly with the warm cinnamon filling and creamy glaze.

Method

1.

Preheat the oven to 180°C. Lightly grease a square 20 x 20cm baking dish.

In a blender, add the Brancourts Cottage Cheese, plant milk, honey and vanilla extract. Blend until completely smooth.

3.

Pour the mixture into a large bowl. Add the self-raising flour and mix with a spatula until a dough begins to form. Use your hands to bring it together into a soft dough. If it feels too sticky, add a little extra flour.

4.

Transfer the dough to a lightly floured surface and roll it out into a large rectangle, roughly 30cm in length and 20cm wide.

5.

Brush the dough with the melted butter. Sprinkle coconut sugar and cinnamon evenly over the buttered dough.

6.

Starting from the long edge, roll the dough tightly into a log. Cut into 9 even pieces and arrange them in the prepared baking dish. Lightly brush any excess melted butter on each scroll and sprinkle with coconut sugar.

7.

Bake for 25–30 minutes, or until the scrolls are lightly golden and cooked through.

8.

While the scrolls bake, mix the Greek yoghurt and icing sugar in a small bowl until smooth to create the glaze.

9.

Allow the scrolls to cool slightly, then drizzle the glaze over the top and serve warm.

¼ cup plant milk

3 tablespoons raw honey

2 teaspoons vanilla bean extract

3 cups self-raising flour

2 tablespoons unsalted butter, melted

 cup coconut sugar

2 tablespoons ground cinnamon

Glaze (optional):

½ cup greek yoghurt

¼ cup icing sugar
