This Berry, Choc & Granola Cottage Cheese Bark is so easy, incredibly delicious & a new favourite. Perfect to have on hand in the freezer for a quick snack! I’ve used Brancourts 97% Fat Free Cottage Cheese but any of the Brancourts CC range works. Mix it up and make it your own by swapping the strawberries out for other fruits like mango, or other berries for the bark, and mix up the toppings with white chocolate, jams & different nuts or peanut butter, instead of the granola.



Method
Blend the cottage cheese, strawberries & honey until smooth then pour this over a baking paper lined tray, spreading out a little with a spatula.
Scatter over the blueberries, granola and drizzle over the melted chocolate.
Place this in the freezer to set for at least 2 hours but overnight is best.
Cut or break into desired size pieces and store in a container in the freezer.

2 x 200g tubs of Brancourts 97% Fat Free Cottage Cheese
½ cup chopped strawberries
3 tbsps honey
1 punnet blueberries
½ cup granola
100g dark chocolate, melted
