Method
Add Brancourts 97% Fat Free Cottage Cheese and eggs to a large bowl. Whisk well until smooth.
In a large bowl, whisk together plain flour, baking powder and sea salt to evenly distribute.
Pour the blended wet mixture into the dry ingredients. Stir gently with a spatula until just combined into a thick, sticky dough. Avoid over mixing to keep the bread light and fluffy.
Transfer the batter into the prepared loaf tin, smoothing the top with the back of a spoon. Bake for 30–40 minutes, or until golden and a skewer inserted into the centre comes out clean.
Allow to cool in the tin for 10 minutes before transferring to a wire rack. Slice and enjoy warm or toasted.
