Method

1.

In a high-speed blender, blend cottage cheese, maple syrup and vanilla extract.

Pour into a bowl and fold in almond flour, vanilla protein powder and chocolate chips.

Cover and refrigerate for at least 1 hour to firm up the mixture for easy rolling. Once chilled, roll into 12 bite-sized balls.

4.

Store in an airtight container in the fridge for up to 5 days – or freeze for longer.
