Cottage Cheese Lava Cake

This single serve chocolate protein lava cake is a perfect Valentine’s Day dessert – rich, warm and designed to be shared or savoured solo. Made with Brancourts Classic Cottage Cheese, the batter blends smooth for a creamy texture before baking to reveal a molten dark chocolate centre. Finished with fresh strawberries and a pinch of flaky sea salt, it’s a simple, intimate dessert that feels special without being overcomplicated. It’s ideal for a cosy night in or a thoughtful homemade treat for someone you love.

Method

1.

Add the cottage cheese, egg, cacao powder, chocolate protein powder and maple syrup to a blender. Blend until completely smooth and creamy, scraping down the sides if needed.

Lightly grease one 12 cm baking tin and line the base with baking paper.

Pour half of the mixture into the tin. Place the dark chocolate squares in the centre, pressing them down slightly. Spoon the remaining mixture over the top, just covering the chocolate.

Bake in a preheated oven at 180°C for 10–12 minutes, until the edges are set but the centre remains soft. The chocolate will melt in the oven to create a lava centre.

Rest for 1–2 minutes, then serve warm in the tin or carefully turn out. Top with strawberries and finish with a pinch of flaky sea salt.
