Method
In a blender, add the Brancourts Lactose Free Cottage Cheese, eggs, plant milk, coconut oil, raw honey and vanilla bean extract. Blend until smooth and creamy.
Pour the blended mixture into the dry ingredients and gently stir until just combined.
Heat a skillet over medium heat. Scoop portions of batter into the pan, cooking until the edges appear dry and bubbles form on the surface.
Flip the pancakes and cook for another 1–2 minutes, or until golden brown and cooked through.
Stack the pancakes to keep them warm, then serve with your favourite toppings – drizzle with raw honey or maple syrup and enjoy!
