Cottage Cheese Mushroom & Rocket Bake

This Cottage Cheese Mushroom & Rocket Bake is an easy, high protein breakfast that can be prepared ahead of time and enjoyed throughout the week. Perfect for feeding the whole family, it's packed with nourishing ingredients and requires minimal effort, making busy mornings that little bit easier.

Method

1.

Preheat the oven to 180°C fan-forced. Lightly grease a baking dish.

2.

Heat the olive oil in a frying pan over medium heat. Add the shallot and cook for 2–3 minutes until softened. 

3.

Add the mushrooms, thyme, sea salt and black pepper and cook for 5–7 minutes, or until the mushrooms are golden and any excess moisture has evaporated. 

4.

Remove from the heat and allow to cool slightly.

5.

In a large bowl, whisk together the Brancourts Classic Cottage Cheese and eggs until combined.

6.

Fold through the cooked mushroom mixture, crumbled feta and rocket until evenly distributed.

7.

Pour the mixture into the prepared baking dish and spread into an even layer. Bake for 30–35 minutes, or until the centre is set and the top is lightly golden.

8.

Allow to cool for 10 minutes before slicing and serving.

3 eggs

1 tablespoon extra virgin olive oil

200g mushrooms, sliced

1 shallot, finely sliced

2 teaspoons dried thyme

1 teaspoon sea salt

½ teaspoon black pepper

150g feta

1 cup rocket
