Preheat the oven to 180°C fan-forced and lightly grease a baking dish.
Cinnamon & Apple Oatmeal Bake
This Cinnamon & Apple Oatmeal Bake is a wholesome, make-ahead breakfast that's perfect for busy mornings. Easy to prepare and ideal for feeding the whole family, it's packed with fibre, protein and delicious warming flavours.



Method
Place the cottage cheese, plant milk, egg, honey and vanilla extract into a blender and blend until smooth and creamy.
In a large bowl, combine the rolled oats, cinnamon, baking powder and sea salt. Add the blended mixture and stir until well combined. Fold through the apple.
Allow the mixture to sit for 5 minutes so the oats can absorb some of the liquid.
Pour into the prepared baking dish and spread into an even layer. If desired, sprinkle with a little extra cinnamon.
Bake for 35–40 minutes, or until golden around the edges and set in the centre.
Allow to cool for 10 minutes before slicing and serving. Serve warm with a dollop of Greek yoghurt, if desired.
