Peach Cheesecake
This Peach Cheesecake is a light, seasonal treat, perfect for enjoying on a warm summer day. Made with Brancourts 97% Fat Free Cottage Cheese, it’s naturally creamy yet low in fat, making it a healthier alternative to traditional cheesecakes. This cake is simple to prepare, gluten-free and light—ideal for sharing with family and friends during sunny afternoons. Brancourts cottage cheese not only enhances the texture but also contributes calcium and protein.



Method
In a blender or food processor, combine the Brancourts cottage cheese, Greek yogurt, honey, eggs, vanilla extract and cornstarch. Blend until completely smooth.
Pour the mixture into the prepared pan and smooth the surface with a spatula.
Bake for 45–50 minutes, or until the cheesecake is set and lightly golden on top.
Allow the cheesecake to cool completely in the pan, then remove the sides carefully.
Arrange the peaches on top of the cooled cheesecake. Drizzle honey and garnish with fresh mint. Chill in the refrigerator for at least 2 hours before serving.
