Preheat the oven to 180°C and line a large baking tray with baking paper.
Spinach Flagel
These Spinach Flagels are a delicious savoury bake made with Brancourts Classic Cottage Cheese, which gives them a soft, fluffy texture while boosting the protein. Packed with spinach and melty mozzarella, they’re satisfying without being heavy. They make a great high protein snack and are perfect for lunch boxes, quick lunches or an afternoon bite



Method
Add Brancourts Cottage Cheese to a high-speed blender and blitz until smooth and creamy.
In a large bowl, combine the blended cottage cheese, flour, baking powder, sea salt and olive oil. Mix until a dough begins to form.
Add the finely chopped spinach and shredded mozzarella, mixing until evenly incorporated.
Divide the dough into 6 equal pieces. Roll each piece into a ball, then gently flatten into a round.
Use your finger to create a small hole in the centre. Place the flagels onto the prepared tray and brush the tops with the lightly beaten egg.
Bake for 22–25 minutes, or until golden on top and cooked through. Transfer to a wire rack to cool slightly before serving.
