Method
Bring a small pot of water to a boil. Add the basil leaves and blanch for 10 seconds, then immediately transfer them to a bowl of ice water to lock in their bright green colour. Drain well, pat dry, and blend with the extra virgin olive oil until smooth and vibrant. Set aside.
Preheat the oven to 200°C. Place the vine of cherry tomatoes on a lined baking tray, drizzle with extra virgin olive oil and sprinkle with sea salt. Bake for 12–15 minutes, or until the skins blister and the tomatoes soften while still holding their shape. Set aside.
Add the cottage cheese, goats cheese, garlic cloves, lemon juice and black pepper to a food processor. Blend until completely smooth, light and fluffy. Taste and adjust the lemon or seasoning if needed.
Spoon the whipped cottage cheese onto a serving plate and swirl it gently with the back of a spoon. Arrange the blistered tomatoes on top, along with any juices from the tray.
Drizzle generously with the basil oil and garnish with fresh basil leaves. Serve immediately as a share plate.
