Self-saucing Chocolate & Cottage Cheese Pudding – a Tom Walton Exclusive!
This high protein chocolate self-saucing pudding with vanilla whipped cottage cheese is an example of just how well cottage cheese can be used in sweet as well as savoury cooking.
Method
In a bowl, combine the dry ingredients, make a well in the centre, then add the cottage cheese, egg, butter and mix to combine. Spoon the mix into the grease baking dish and set aside.
In a small jug or bowl, combine the brown sugar, cocoa powder and water then pour this over the back of a spoon, over the pudding and carefully transfer to the oven to cook for approx. 30-35 minutes.
Meanwhile in a small food processor or blender, whip the remaining cottage cheese, along with the icing sugar and vanilla, until smooth. Refrigerate until needed.
Serve the pudding while hot with the whipped vanilla cottage cheese and fresh raspberries.

1/3 cup almond meal
1/2 cup brown sugar
1/3 cup cocoa powder
Pinch salt
1 cup Brancourts Protein+ Cottage Cheese
1 egg
1/3 cup melted butter, cooled
1/2 cup brown sugar
2 tbsp cacao powder
1 cup boiling water
1 cup cottage cheese
2 tbsp icing sugar
1 tsp vanilla paste
1 punnet fresh raspberries to serve
