Method
In a microwave-safe bowl, add the dark chocolate chips and coconut oil. Microwave in 30-second increments until the dark chocolate has completely melted into a smooth consistency.
Pour the melted dark chocolate into the cottage cheese mixture. Blend once more until smooth and creamy.
Line a small rectangular or square pan with baking paper, leaving some overhang for easy removal. Pour the fudge mixture into the lined pan, spreading it evenly with a spatula.
Place the pan in the refrigerator to set for at least 2-3 hours. Cut into squares and enjoy!
