One-Pan Tuscan Chicken

This One-Pan Tuscan Chicken dish is a rich, flavourful take on a classic Italian favourite. Traditionally, Tuscan chicken features a creamy, garlicky sauce, but this version swaps heavy cream for Brancourts Classic Cottage Cheese, creating a creamy, rich base without the heaviness. This nourishing, protein-packed dish doesn’t compromise on Italian flavours and is perfect for meal prepping. Simply batch prep and store in the freezer for an easy go-to for weekday lunches.

Method

1.

Pat the chicken breasts dry with paper towels. Season both sides with dried oregano, sea salt and black pepper.

Heat 2 tablespoons of extra virgin olive oil in a large pan over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove from the pan and set aside.

In the same pan, reduce the heat to medium and add the remaining tablespoon of olive oil. Add the sliced brown onion and cook for 2 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the sun-dried tomatoes to the pan and stir well. Pour in ¼ cup of water to deglaze the pan, scraping up any browned bits for extra flavour.

Stir in the baby spinach and let it wilt for 1-2 minutes. Reduce the heat to low, then add Brancourts Classic Cottage Cheese, coconut cream and half of the grated parmesan. Stir until the sauce is creamy and well combined.

6.

Place the seared chicken breasts along with the broccolini back into the pan, nestling them into the sauce. Cover and let them simmer on low for 5-7 minutes, or until the chicken is cooked through.

7.

Sprinkle the remaining parmesan over the chicken. Garnish with fresh parsley and season with salt & pepper.
