Method

1.

Add the cottage cheese, honey, 2 tablespoons of pistachio butter, and vanilla bean extract to a high-speed blender. Blend until smooth and creamy.

Pour the mixture into your Ninja Creami pint, cover, and freeze for 24 hours. If you don’t have a Ninja Creami, skip to the alternative method.

3.

Once frozen, place the pint into the Ninja Creami and run a Lite Ice Cream cycle. The texture might be slightly powdery after the first spin—just run a Re-Spin cycle. (Add a tablespoon of milk or water if it needs a bit more creaminess).

4.

Swirl through the remaining 2 tablespoons of pistachio butter, top with the crushed pistachios and serve immediately.

5.

Alternative method:
Add the cottage cheese, honey, 2 tablespoons pistachio butter and vanilla bean extract to a high-speed blender.

6.

Pour the mixture into a shallow, freezer-safe container and smooth out the top. Freeze for 2–3 hours, stirring every 30–45 minutes to break up ice crystals and keep it creamy.

7.

Once set and scoopable, swirl through the remaining 2 tablespoons of pistachio butter. Serve topped with crushed pistachios and enjoy immediately.

  cup pistachios, roughly chopped
