Roasted Eggplant with Zesty Herb Dressing

Method
Cut the eggplant into 6 wedges lengthwise. Place them on the prepared baking tray.
In a small bowl, whisk together extra virgin olive oil, tamari, apple cider vinegar, coconut sugar and black pepper. Brush this mixture evenly over the eggplant wedges.
Transfer the tray to the oven and roast for 30 minutes, flipping the wedges halfway through for even caramelisation.
In a bowl, mix the Brancourts Classic Cottage Cheese, garlic, parsley, mint, lime juice, sea salt and black pepper. Stir until well combined and creamy.
Arrange the roasted eggplant wedges on a serving plate. Drizzle with zesty dressing and garnish with pickled onions, sesame seeds, fresh mint and dill. Serve with a lime wedge.
