Method
In a large bowl, add rolled oats, cinnamon, sea salt, vanilla protein powder, baking powder, and baking soda. Stir to combine.
In a separate bowl, whisk together the soy milk, espresso, raw honey, vanilla bean extract and almond butter until smooth.
Pour the wet ingredients into the dry and stir gently until just combined. Stir in the apple cider vinegar briefly to activate the leavening agents. Pour the batter into the prepared baking dish and smooth the top.
Bake for 25–30 minutes, or until the centre is set and the top is golden brown. Allow to cool completely before layering.
While the oats cool, blend the cottage cheese, vanilla protein powder and raw honey in a blender or food processor until smooth and creamy.
Spread the cottage cheese mixture evenly over the top. Dust with cocoa powder just before serving. Slice and enjoy!
