Heat a large pan with a drizzle of olive oil over medium heat. Add garlic, onion, salt, pepper and chilli flakes. Sauté all ingredients for 2-3 minutes, until fragrant and the onion becomes translucent.
Creamy White Fish Puttanesca
This easy one-pan recipe offers a light, healthy and satisfying midweek meal. Combining the creamy richness of Brancourts Classic Cottage Cheese with fresh ingredients, this recipe is both easy to prepare and full of wholesome goodness.
Method
Pour in the can of crushed tomatoes. Fill the tomato can halfway with filtered water and pour it into the mixture. Add tomatoes and bring the pan to a boil over high heat. Cook covered for 10 minutes.
Once tomatoes have softened, reduce heat to a simmer. Add olives, capers, cottage cheese and anchovies. Gently stir all ingredients for 2 minutes, until the cottage cheese has melted into the sauce.
Place the broccolini and snapper fillets in the pan. The cooking time will vary depending on the size of your fish. Start with 10 minutes, but it may take 12 minutes – or 8 minutes for smaller fillets. Cook partially covered, with the liquid simmering (not boiling), until your snapper is flaky and the broccolini is soft.
Garnish with fresh basil and more chilli flakes (optional). Serve with crusty sourdough bread (if desired).
