Savoury Salmon Breakfast Bowl

Indulge in this vibrant, nutritious breakfast bowl that embodies the best of Mediterranean cuisine. Low in fat and high in protein, the cottage cheese offers a satisfying, guilt-free base that complements the fresh and flavoursome toppings.

Method

In a small dish, add all salsa ingredients and stir well. Set aside.

Poach your egg by adding 1/2 cup water to a large microwaveable mug. Crack the egg, making sure it is fully submerged. Cover the top with a small plate and microwave on high for 1 minute. Alternatively, bring a small pot of water to a boil over the stove with a dash of vinegar. Stir the water in a circular motion creating a vortex. Crack the egg in the middle of the vortex and cook for 3 minutes. Remove the egg and set aside while you build your bowl.

Begin to layer your breakfast bowl, starting with a bed of spinach. Add zesty olive salsa, smoked salmon and cottage cheese. Place your poached egg in the centre of the bowl.

Garnish with fresh dill and black sesame seeds. Drizzle olive oil and serve with a lemon wedge.

Ingredients

Zesty Olive Salsa:

1/4 cup sun-dried tomatoes, sliced

1/4 cup Lebanese cucumbers, quartered

2 tablespoons red onion, finely sliced

1 tablespoon dill, finely sliced

6 green olives, pitted and halved

3 cherry tomatoes, halved

1/4 lemon, juiced

Breakfast Bowl:

1 egg

1 cup baby spinach

100g smoked salmon

2 tablespoons Brancourts 97% Fat Free Cottage Cheese (or any of our Brancourts Cottage Cheese range)

Fresh dill, to garnish

1 teaspoon black sesame seeds

1 teaspoon extra virgin olive oil

1/4 lemon wedge
